Want a fun, and delicious, activity to do with your child in the kitchen this Fall? Here's a pumpkin nut bread recipe that makes for a wonderful project on a crisp autumn afternoon.

Makes 2 loaves

Ingredients:

  • 1 cup (2 sticks) butter or margarine, at room temperature.
  • 3 cups sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 16-oz. can solid packed pumpkin
  • 3 cups sifted flour
  • 1 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1 tsp. cloves
  • 1/2 tsp. nutmeg
  • 1 cup chopped walnuts
  • 1 cup dark or golden raisins
  1. Cream together butter and sugar.
  2. Beat in eggs and vanilla. Add  pumpkin. Mix well.
  3. Sift together flour, salt, baking soda, baking powder, cinnamon, cloves and nutmeg. Blend into pumpkin mixture.
  4. Sit in nuts and raisins.
  5. Pour into 2 greased and floured 9" x 5" x 3" loaf pans.
  6. Bake at 350 degrees for 60-65 minutes. Let stand 10 minutes. Remove from pan. Cool on rack before slicing.
