Bake Sweet Potato and Marshmallow Casserole Activity

Even if sweet potatoes don't make your kids' top 10 list of favorite foods, try baking them and topping them with fluffy marshmallows -- it will be tough to find a child who can resist taking at least a bite. This dish is a festive addition to any holiday table and packs a good supply of vitamins and fiber.

What You Need:

  • 2 small to medium sweet potatoes, diced
  • ¼ cup butter
  • ½ cup golden brown sugar, firmly packed
  • ¼ cup milk
  • 3 tablespoons orange juice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon salt
  • 1 10.5-oz package mini marshmallows

What You Do:

  1. Preheat the oven to 350 degrees.
  2. In a large pot, have your child boil the potatoes for 15-20 minutes, or until tender.
  3. Drain the potatoes and mash them with a potato masher.
  4. Put the potatoes in a large mixing bowl.
  5. Add all of the other ingredients except for the marshmallows.
  6. Beat with an electric mixer until the potatoes are smooth and fluffy.
  7. Spread the potatoes into a 9”x13” casserole dish.
  8. Sprinkle the marshmallows on top.
  9. Bake for 25 minutes, or until the marshmallows are golden brown and puffed.
  10. Enjoy right away!
