The best way to encourage kids to eat well is to have fun with food. Funny songs can help. One of my sons was a very picky eater growing up, and we had to find ways to bring humor to the situation. A few great songs come to mind:

Over the weekend, I came across a 1979 album, The Corner Grocery Store by Raffi with Ken Whiteley. The title song, "The Corner Grocery Store" is particularly relevant to encouraging healthy eating among young children.

Sample lyrics:
