Hi -
If lava builds up over time you end up with a volcanic mountain, which you see in Hawaii and in cone volcanoes on land, like Mt Vesuvius. Over time the hardened lava (igneous rock), will weather and erode to form soils that are rich in minerals and good to grow things like potatoes (such as is the case in Idaho).
