Far as I know, you can use whatever cheese you have available. I don't know any kind that will not grow mold. Of course, you probably already know that certain molds are grown in cheeses to give them their flavors, like blue cheese and limburger. Pick your cheese, expose it for a while and then cover to keep moist so it doesn't dry out, and observe. You might want to use several types of cheese and experiment to see which will show the mold first.
