2 cups dried lentils
4 cups cold water
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium onion, diced
1 28-ounce can low-sodium tomatoes
2 garlic cloves, crushed
2 bay leaves
Rinse lentils. Place all ingredients in a saucepan, and bring to a boil. Cover and simmer over a low heat for 2 to 2 1/2 hours, or until tender. Add water as desired. Makes 6 servings. (Freezes well.)
