Ingredients:
6 each, medium boiling potatoes, with skins on
Place in a large pan with enough water to cover. Bring to a boil. Reduce heat and simmer for 15 minutes or until potatoes are tender. Drain well and cool. Peel skins off potatoes and cut into 1/4-inch pieces. Place in medium sized bowl.
1 small onion, chopped
1/8 teaspoon black pepper
1/2 teaspoon salt
1/2 cup celery, chopped
2 eggs, hard-cooked coarsely chopped
Add to potatoes and stir
1/4 cup light mayonnaise or salad dressing*
2/3 cup nonfat yogurt
2 teaspoon mustard, prepared
Mix in a separate bowl. Add to potato mixture. Stir until potatoes are covered.
*can use fat-free salad dressing.
