4 servings, about 2 cups each
Ingredients:
- 1 (7 ounces) bag low-fat or reduced-fat tortilla chips
- 2 cups cooked mashed pinto beans* or refried beans
- 1½ cups shredded reduced-fat or regular cheddar cheese*
- 1 tomato, chopped
- 2 green onions, chopped
- 1 cup salsa
- ½ cup non-fat or low-fat sour cream or plain yogurt
*WIC food
Steps:
- Put chips in large baking dish and cover with beans and cheese.
- Put baking dish in oven under broiler for 5 minutes or until cheese has melted.
- Top with onions, tomatoes, salsa, and sour cream or plain yogurt.
