4 servings, about 1 cup each
Ingredients:
- 6 cups shredded carrots (cabbage or cucumber)
- 2 cloves garlic, minced or ¼ teaspoon garlic powder
- 2 seeded, chopped chiles
- ½ cup roasted peanuts
- grated peel and juice of 1 lime
- 2 teaspoons fish sauce
- 1 teaspoon sugar
- 4 lettuce leaves
Steps:
- Crush 2 cups carrots (cabbage or cucumber), garlic, chiles, and peanuts together in bowl or mortar until somewhat juicy.
- Add remaining ingredients except lettuce and mix well until vegetables are limp.
- Serve on lettuce leaves.
