Ingredients:
- 1 (16 ounces) jar cut nopales (cactus)
- 1 medium onion, cut into 1-inch strips
- 3 garlic cloves, minced or 3/8 teaspoon garlic powder
- 2 pickled jalapenos, finely minced
- ¼ cup olive oil
- 1/3 cup lime juice
- 8 tortillas
- 4 tomatoes, sliced
- 1 bunch of cilantro, chopped
- ½ cup low-fat ranchero or queso fresco cheese, crumbled
Steps:
- Combine nopales and onion in a bowl.
- Crush the garlic and jalapenos in olive oil until it forms a puree. Add lime juice and mix well. Pour mixture over nopales and onions. Mix.
- Place in refrigerator overnight
- Place tortillas on 2 baking sheets. Heat in 325°F oven for about 10 minutes or until they start to brown. Cool.
- Add the tomato and cilantro to the nopales.
- Spoon the nopales onto tortillas. Top with cheese.
