Basil Tuna Salad

Ingredients

  • ¼ pkg (3oz) noodles
  • 1 can (6 ½ oz) chink light tuna, packed in water, drained and flaked
  • ½ cup sliced celery
  • 2 Tbsp minced chives
  • ¼ cup plain non-fat yogurt
  • ¼ cup reduced-calorie mayonnaise
  • 1 Tbsp lemon juice
  • 1 Tbsp chopped fresh basil or 1 tsp dried basil leaves, crushed
  • ¼ tsp ground pepper
  • 1 cup cherry tomato halves

Directions

  1. Cook noodles according to package directions without salt.
  2. Meanwhile, combine tuna, celery, and chives in mediumsized bowl.
  3. Drain noodles.
  4. Add to tuna mixture, toss gently. In small bowl, combine yogurt, mayonnaise, lemon juice, basil, and pepper.
  5. Add to tuna mixture, stirring gently until ingredients are evenly coated.
  6. Add tomatoes; toss to combine.
  7. Serve immediately or refrigerate covered.
  8. Makes 4 servings.
