This recipe is courtesy of Nancy Patin Falini, M.A., RD, LDN, a nutritionist and the author of Gluten-Free Friends: An Activity Book for Kids . When Nancy first served these bread sticks to her family, they had no idea they were gluten free.
Ingredients
2½ cups garbanzo bean flour (also called chick-pea flour) 2 tablespoons sugar 1½ teaspoons baking powder ¾ teaspoon salt ½ cup olive oil ½ cup grape juice
Directions
Preheat oven to 350°F. In a large mixing bowl, combine the garbanzo bean flour, sugar, baking powder, and salt. Add the olive oil and grape juice, and mix by hand until dough is formed. Place a portion of the dough between both hands, and roll into sticks about 4 inches long.
Bake on an ungreased baking sheet 12 to 15 minutes until the bread sticks are slightly browned. These bread sticks are especially tasty while still warm from the oven.
Makes 24 to 28 bread sticks
