(makes 6 servings)
Ingredients:
- 3/4 cup 1% milk
- 1/3 cup couscous
- 1/2 cup plain or lemon lowfat yogurt
- 1/2 cup nonfat sour cream
- 1 tablespoon honey
- 1 teaspoon lemon zest
- 1/2 cup strawberries, hulled and sliced
- 1/2 cup fresh blueberries
- 1/2 cup sliced nectarines
- 1/2 cup fresh raspberries
- 1/4 cup dates, chopped
Directions:
- In a medium saucepan, bring milk to a boiling then stir in couscous. Simmer, covered for 1 minute then remove from heat and let stand for 5 minutes. Fluff with a fork and let stand 1 minute.
- In a small bowl, combine yogurt, sour cream, honey and lemon zest. Add couscous and mix well.
- In a separate bowl, combine fruit.
- Using 6 clear glasses, layer the bottom of each with fruit followed by a layer of the couscous mixture then another layer of fruit.
