Ingredients
- 2 cups wagon wheel pasta
- ¾ cup Picante sauce
- 1/3 cup mayonnaise
- ½ tsp cumin
- ½ tsp salt
- 1 can (15oz) black beans, rinsed and drained
- 1 cup (4oz) diced Cheddar cheese (1/2-inch pieces)
- 1 cup small cherry tomato quarters
- 1 med green pepper, cut into short, thin strips
- ¼ cup sliced green onions with tops
Directions
- Cook pasta according to package directions;drain.
- Transfer to large bowl; cool to room temperature.
- In small bowl, combine Picante sauce, mayonnaise, cumin, and salt; mix well.
- Pour over pasta; mix well.
- Add remaining ingredients; mix well.
- Chill.
- Serve with additional Picante sauce.
- Makes 6 cups.
