Wild West Pasta Salad

Ingredients

  • 2 cups wagon wheel pasta
  • ¾ cup Picante sauce
  • 1/3 cup mayonnaise
  • ½ tsp cumin
  • ½ tsp salt
  • 1 can (15oz) black beans, rinsed and drained
  • 1 cup (4oz) diced Cheddar cheese (1/2-inch pieces)
  • 1 cup small cherry tomato quarters
  • 1 med green pepper, cut into short, thin strips
  • ¼ cup sliced green onions with tops

Directions

  1. Cook pasta according to package directions;drain.
  2. Transfer to large bowl; cool to room temperature.
  3. In small bowl, combine Picante sauce, mayonnaise, cumin, and salt; mix well.
  4. Pour over pasta; mix well.
  5. Add remaining ingredients; mix well.
  6. Chill.
  7. Serve with additional Picante sauce.
  8. Makes 6 cups.
