Ingredients
- 4 (1 ½ cups) large broccoli stems without flowerets, chopped
- 1 Tbsp lemon juice
- ¼ tsp ground cumin
- 1/8 tsp garlic powder
- 1 small tomato, diced
- 1 can (4oz) green chilies, chopped
- 1 Tbsp chopped sweet onion
Directions
- Over high heat, bring pot of water to a boil.
- Add broccoli; cook until tender 6 to 7 minutes and drain, or microwave, covered, for 4 minutes until tender. In food processor, combine broccoli, lemon juice, cumin, and garlic powder.
- Process until smooth.
- Transfer to bowl; stir in tomato, green chilies and onion.
- Chill until ready to serve.
- Makes 2 cups
