Ingredients

  • 4 (1 ½ cups) large broccoli stems without flowerets, chopped
  • 1 Tbsp lemon juice
  • ¼ tsp ground cumin
  • 1/8 tsp garlic powder
  • 1 small tomato, diced
  • 1 can (4oz) green chilies, chopped
  • 1 Tbsp chopped sweet onion

Directions

  1. Over high heat, bring pot of water to a boil.
  2. Add broccoli; cook until tender 6 to 7 minutes and drain, or microwave, covered, for 4 minutes until tender. In food processor, combine broccoli, lemon juice, cumin, and garlic powder.
  3. Process until smooth.
  4. Transfer to bowl; stir in tomato, green chilies and onion.
  5. Chill until ready to serve.
  6. Makes 2 cups
