Ingredients

  • 1 pound hard vegetables, sliced into sticks (carrots, red peppers, zucchini, green beans and asparagus)
  • 1 cup ranch dressing, plus extra for dipping ¼ cup olive oil, plus 1 Tbsp
  • 2 Tbsp fresh lemon juice

Directions

  1. Blanch vegetables in salted boiling water for 3 minutes to soften.
  2. Mix ranch, olive oil and lemon juice.
  3. Pour mixture over vegetables to coat.
  4. Marinate for 1 to 3 hours.
  5. Put 1 Tbsp olive oil in a large frying pan.
  6. Fry vegetables over medium heat until cooked through and brown on all sides.
  7. Serve with Ranch for dipping.
