Black Bean Salsa
When summer is in full swing, things sure get hot. Your child can concoct a healthy and flavorful condiment to compliment any summer dinner, which doesn’t require using any heat at all!
What You Need:
- 1 15.5-oz can black beans
- 1 5.5-oz can corn
- 1 tomato, chopped
- ¼ cup chopped red onion
- ¼ cup chopped red, yellow, or green pepper
- 1 teaspoon apple cider vinegar
- Dash of salt, pepper, paprika, and cayenne
- Squeeze of lime
- Chef's knife
- Can opener
- Mixing bowl
What You Do:
- Offer your child a can opener to get started creating the black bean salsa. He can open the cans of black beans and corn and add rinse and drain then in the sink using a colander.
- Now your child can place the drained and rinsed black beans and corn in the mixing bowl and begin adding the rest of the ingredients, starting with the apple cider vinegar and squeeze of lime.
- It’s time to get chopping! Offer your child a chef's knife and invite him to chop a fresh tomato and add to the mixture. Be sure to supervise the chopping so nobody gets cut! Your child can also slice and dice ¼ cup of red onion and red, green or orange pepper – whatever his favorite is.
- Invite your child to mix the ingredients and determine if he would like a spicy salsa or a mild one. Now he can season according to his taste by adding salt, pepper, paprika, and even a dash of cayenne if he wants it really hot.
- Now your child can serve up the salsa alongside some grilled chicken or hamburgers for a fresh cool side dish, or enjoy it with some tortilla chips for a nice lunch.
