If you have a group of willing friends you could set up a stretching program and measure which group improves in their flexibility or range of motion the most following a regular routine of movements. You could divide them by gender or athletic ability or some other criteria. The pluses are you could spend some time goofing off with friends while recording your results over a few weeks. Be sure you do some research into what types and how to do each stretch. Focus on the changes in the flexibility not the initial flexibility.

A science project that would fit in with your class would be Osmosis and Diffusion Science Experiment. You would be checking on the inside of house plant leaves after using a salt solution. This would prove your hypothesis of what happens when plants drink salted water. Just don't use mom's plants.

There are lots of experiments out there for an 11th grade student but you don't have to go with something that is very difficult just interesting. How about something like the sense of smell. This could be very interesting for your volunteers.
