I have done this for years as part of a science enrichment. Be careful not to over cook the sugar solution: you will get a soft candy stage instead of a supersaturated solution. Supersaturated is when the liquid can dissolve way more solid than it should (done by heating up the liquid first). Also, We did this with a few drops of food coloring just to make it more fun. Last hint: we used the tall plastic containers (like from Won Ton soup or the deli counter), with holes punched in at the top to hold the sugar solution. The height of the container allows for a longer crystal growth while the width of the container decreases the overall volume of sugar solution needed. Be sure to place the container somewhere were it won't be bumped a lot: this may disrupt the crystal growth. Have fun!
