Have you tried lunch meat roll-ups with cheese?  Or salad leave roll-up with whatever meat, cheese or vegetable your daughter likes.  How about vegetables, fruits or meats/cheeses on a skewer?

I have a picky eater as well...here's what you can do, have all of her favorite things that she likes to eat, and have her "assist" you when you're packing her lunch.  This way, she will more than likely eat the lunch.  If a person eats the same lunch each day, they will not die of malnutrition.  Sometimes children go through phases where they'll only eat certain things for certain amounts of time.  This too shall pass.  Believe me, you'll both be laughing about this when she's 20!!
