Good question! Sorry nobody responded to you in so long! You've probably moved on with it by now. I would guess different varieties of apple would have different proportions of ingredients, including H2O. You could take slices of different samples, exact same starting weight, dry them slowly in the microwave (same amount of time) or in the open. Re-weigh. What is different is that the water has evaporated. Compare.

It changes depending on how well watered the apple tree was. Better watered trees have juicier apples and badly watered trees have slightly drier apples.
