My understanding of this activity is that you are not meant to measure the amount of DNA from the spinach, but simply meant to extract it from the spinach and observe. Moreover, this activity is too basic for the measurement of DNA and the tools required to make those measurements are not easily available to everyone. This is a science activity that is more for fun rather than it is for science fair/scientific method learning. Hope this helps.
