What tasks should my almost 3-year-old granddaughter be doing at her age?

We care for my granddaughter and she can recognize all letters, scribbles to write her name and grandma/grandpa, can't cut yet with scissors, knows her numbers but does miss a few up to 20, and loves to have us read to her and she speaks what the page says before I do. What should she be doing at this age and what should I work on for she's ready for preschool this fall. She goes to ECFE classes now. Thank you.
