Ingredients
3 medium red potatoes, unpeeled 1 avocado, peeled, pitted, and cubed ¼ cup chopped onion ¼ cup chopped fresh cilantro or parsley leaves ½ cup honey-mustard salad dressing
Directions
Cut potatoes into 1-inch cubes. Cover with water, and cook over medium heat until tender. Pour off water. Cool. Combine potatoes, avocado, onion, cilantro or parsley, and salad dressing in mixing bowl.
Toss gently. Serve immediately.
