Ingredients
- 1 pkg (10oz) frozen shrimp, cooked
- 1 cup celery, thinly sliced
- 1 can (11oz) mandarin oranges, drained
- 2 Tbsp cilantro, chopped
- ¼ cup green onions, sliced
- ¼ cup shredded coconut
- ½ cup plain yogurt
- 1 Tbsp lemon juice
- 1 Tbsp honey
- 1 tsp grated orange rind
- 1 tsp Dijon mustard
- ½ tsp ginger
- 1 Tbsp pimiento, chopped
Directions
- In large bowl, combine shrimp, celery, oranges, cilantro, onions, and coconut.
- Combine remaining ingredients except pimiento in a food processor fitted with a steel blade.
- Pulse 2 to 3 times to combine.
- Add to shrimp mixture and toss gently.
- Garnish with pimiento.
