Shrimp Ambrosia

Ingredients

  • 1 pkg (10oz) frozen shrimp, cooked
  • 1 cup celery, thinly sliced
  • 1 can (11oz) mandarin oranges, drained
  • 2 Tbsp cilantro, chopped
  • ¼ cup green onions, sliced
  • ¼ cup shredded coconut
  • ½ cup plain yogurt
  • 1 Tbsp lemon juice
  • 1 Tbsp honey
  • 1 tsp grated orange rind
  • 1 tsp Dijon mustard
  • ½ tsp ginger
  • 1 Tbsp pimiento, chopped

Directions

  1. In large bowl, combine shrimp, celery, oranges, cilantro, onions, and coconut.
  2. Combine remaining ingredients except pimiento in a food processor fitted with a steel blade.
  3. Pulse 2 to 3 times to combine.
  4. Add to shrimp mixture and toss gently.
  5. Garnish with pimiento.
