Look no further for your healthy Halloween treats. These pumpkin cookies are sweet, fluffy and soft. The recipe makes about 5 dozen cookies, so it’s perfect for a Halloween party.

Preparation time: 30 minutes Baking time: 10-12 minutes per batch Makes about 5 dozen, 2-inch cookies

What You Need:

  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 1 16-ounce can pumpkin
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 1 cup quick cooking rolled oats
  • 2 cups (12 oz) white chocolate chips

What You Do:

 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large bowl, stir together both types of sugar, along with the salt, vanilla, egg, and pumpkin, until all they are creamy and smooth.
  3. Next, add the remaining ingredients except for the white chips. Mix until everything is well incorporated.
  4. Stir in the white chocolate chips. Be sure to use a spoon instead of an electric mixer, so the chips don’t get chopped up.
  5. Lightly grease your cookie sheets or line them with parchment paper.
  6. Use two teaspoons to shape dough into balls and drop onto the cookie sheets. Space them about two inches apart.
  7. Bake for 10-12 minutes or until the cookies look dry and set on the outside. (They should still be moist in the center.)
  8. Let the sheets stand and cool for several minutes before removing the cookies.
  9. Let cookies cool on a wire rack.
  10. Eat and enjoy! These are best eaten fresh, but can also be stored in a tightly sealed container.
